Want to put something new and exciting on the table this Christmas without feeling guilty about the calories involved? Well, look no further. We have the perfect sweet treats just for you. You can now have a holly jolly Christmas this year with healthy, wholesome and tasty, scrumptious Christmas cakes and pudding from 'Life in Your Food Jamaica'.

After completing a two-year science of raw food programme in Atlanta, Georgia, raw food chef and health coach Kerry Coote decided to take her passion to new heights.

Coote has now made it her mission to cater to all of your vegetarian needs, spreading the joy of healthy living in a delicious way. "I was tired of seeing people dying from all types of lifestyle diseases," she told Food. Out of this last year, Life in Your Food Jamaica was born. Coote's Life in Your Food comprises non-processed food with no added preservatives - no heat.

Think of a no-bake Christmas cake or banana non-processed ice cream. Eating clean doesn't have to be bland. If taking that big step seems difficult and you need a little boost in the right direction, Coote, as a health coach, offers consultation for lifestyle changes, classes on how to prep raw food, as well as reconstructing your kitchen into a raw kitchen.

Coote has been a fan of healthy eating all her life, which was what prompted her scholastic pursuits, taking into consideration the natural resources readily available in Jamaica.

Food visited Coote's raw kitchen last Monday, where she made some of her delicious offerings, including her raw Christmas cake.

Ingredients

(Nuts of your choice)

1 cup walnuts

1 cup pecan

1 cup pitted dates

1 cup Brazil nuts

1/2 cup of chocolate drizzle (Topping and amount of choice)

Method:

1. Soak nuts together for at least eight hours.

2. Process (blend) to your liking - partially or fully blended.

3. Place on a plane plate then hand-shape in form of choice.

4. Add drizzle and/or topping of choice. Then serve.
