Soup it up!

Soup is a quick, hot and easy meal to fix. Gone are the days when mama used to only cook that huge pot of rich pumpkin or pepper pot soup on a Saturday. Nowadays, soups are being prepared any time of the day or week.
Although the ingredients determine the nutritional benefits of soup, there is a list of vegetables and protein-based ingredients that work perfectly together.
You can always create your own kind of soup by adding your own ingredients. Here is a recipe to help you prepare some real Jamaican Pepper Pot Soup.
(1) Pepper Pot Soup
2 cups of callaloo (chopped finely)
1 cup coconut milk (blended and juiced)
1 large potato (diced, peeled)
1 green Scotch bonnet pepper (remove seeds)
1 lb flour
1/2 teaspoon thyme
Salt to taste
In a bowl, knead flour into dough, make small dumplings, cover and set aside. Put water into a large soup pot, bring to boil. Add okras, potatoes and callaloo. Boil until cooked. Stir while adding dumplings, coconut milk, pepper, thyme, and salt. Continue to simmer for 20 minutes. Serve hot.
