Grilled Surf and Turf: A combination of 5oz lobster thermidor and 4oz grilled beef tenderloin going together with roasted garlic whipped potato and sautéed seasonal vegetables.

"I want to introduce to Jamaica a cooking method of fish that does not leave that bad aftertaste in your mouth but, instead something more pleasant," said Carlton McDonald, head chef of Pelican Restaurant, giving his remark about the crusted snapper dish. His signature style in preparation of the other two dishes will certainly make a difference in food enthusiasts' dining pleasure.
