Chillin' n' Grillin' excites
There's nothing like chilling with friends over some good grilled grub for the summer.
Last Thursday, patrons did just that at the Campion Alumni Association's fundraising event, Chillin' n Grillin'.
Chefs Garielle Ferguson, Alexa Von Strolley and Evrol Ebanks turned up the heat in the kitchen, and as sweet aromas danced in the air, those in attendance did not hesitate to feast on the culinary delights, courtesy of Copperwood and Rainforest Seafoods.
Chef Ferguson started the buffet line with the Korean surf and turf slider with smoked mayo and kimchee, and BBQ pork on corn tortilla. These provided a burst of flavour to the taste buds.
Chef Strolley treated foodies to a turkey burger with French fries, ranch dressing, lettuce, slow-roasted tomatoes, Swiss cheese and chive aioli on a home-made potato roll. the bacon sausage baked mac with beer cheese topped with onion rings and home-made crumbled pretzel had them asking for more, which they got in the form of the Harissa-grilled leg of lamb with carmalised onion, and hallouimi empanadas with garlic cream dipping sauce.
Meanwhile, Chef Ebanks whipped up grilled salmon nuggets with pineapple and mango chutney relish; surf and turf sliders topped with crumbles of smoked salmon and Monterey Jack cheese; jumbo shrimp kebabs with a sweet chilli mustard and Sriracha sauce, and jerked snapper slider topped with feta cheese, olives, and roasted cherry tomatoes.
Guests were encouraged to pair the mouth-watering dishes with the wide wine selection of Jacob's Creek Chardonnay, Moscato, Merlot, or Maker's Mark cocktail and Jim Bean cocktail, among others. Serge Island Dairies provided smoothies for those desiring a lighter beverage.
When we all thought they could not top the food, they decided to add a burger-eating competition into the mix. Those who signed up were asked to chow down on a pound of beef in a soft bun. The first to finish would receive a $5,000 gift certificate, courtesy of Rainforest Seafoods. In the heated matchup, two contestants were neck and neck. But in the end, it was fitness enthusiast Javoy Sawyers who emerged the winner.
From there, many took their final stroll over to the buffet and the bar before leaving what was the ultimate summer 'chillin n grillin' experience.
