Rib, Roast, Rum & More returns to the Grillin’ Pit

Dubbing itself a "foodies paradise", the all-you-can-eat, mixed-drink inclusive event Rib, Roast, Rum & More is a sure win.

Tomorrow, patrons will be able to chow down on an array of delicious offerings, including their signature Appleton Rum BBQ Ribs, and Campari mesquite jerked pork, pan-jerked chicken, beer-braised beef, and curried goat, as well as a succulent fish in foil and creamy pastas for the non-meat eaters among us.

Backed by newcomers Caribbean Producers Jamaica (CPJ), the organisers, Knott Francis Eventures (KFE), are excited about the company's decision to adopt their patron's second favourite food - The Pasta Station - as a way of showcasing the diversity of their products.

KFE's Executive Chef Alex 'D' Great shares with us his recipe for Mexican cheddar fettuccine, using products primarily found in CPJ Market. Give it a try. It's finger-licking good.

Mexican cheddar fettuccine

 

Ingredients

 

1/4 bottle white wine

1pk fettuccine pasta

1pk yellow cheddar cheese

1pk chorizo sausage

1 tin jalapeno pepper

1sml bottle sour cream

1 box heavy cream

1oz bell pepper

1oz onion

1oz garlic

3oz butter

Salt and pepper to taste

 

Method

 

1. Boil pasta until it is al dente, and set aside.

2. Finely chop onion, jalapeno and garlic and cut bell pepper into strips.

3. Heat skillet, add chorizo and sautÈ until crisp.

4. Add oil, garlic, onion, bell pepper and the jalapeno pepper until onions are translucent.

5. Deglaze pot with white wine and add heavy cream and cheddar cheese.

6. Toss in pasta and add salt and pepper to taste.

7. Serve while hot.

Yield: 4-5 persons

While desserts have always been a feature at this event, KFE will be showcasing their talents by featuring their in house patisserie - Sandreika Gordon, and her use of the Kerry Gold Butter, also distributed by CPJ, in the creation of her delectable treats.

KFE encourages patrons to come out for the food but stay for the fun, as Nigel Swaby of Elevate Entertainment promises to keep patrons moving and grooving throughout the night.
