Chef Kenard Swaby's special is the herb-crusted roast lamb with tournee potatoes, butter broccoli with mint pomegranate and august sauce.

What makes it special? "I strongly believe that the combination of flavours together with the technique will create an experience that will be engraved in your mind," Chef Swaby noted.

He has been working with Terra Nova on and off for a little over a decade. Coupled with the environment being able to do what he loves daily is perfect. His ability to work with fresh foods is like working directly with nature which he also loves, which is the main reason why he personally loves being a chef.
