Their Executive Chef, Cecil Jagdath requested an audience with us in his kitchen, where he displayed impeccable culinary techniques. He presented cod fish croquette with a ginger Scotch bonnet sauce, fillet Mignon beef tenderloin thermidor ackee surprise finishes off with a Caribbean style slaw, and for dessert, mango and strawberry chocolate brownie paired with banana bread laced with banana coulis.
Dedicating a quarter-century to the food industry, Jagdath explained that he loves to fuse flavours, working specifically with his native ingredients.
As the executive chef at Marguerite's for six years, he enjoys challenging himself daily because cooking is his art.
As for the challenges he faces when it comes to the menu, he is always mentally and physically prepared to take on the mission of providing savoury and sweet satisfaction. "If you cook without love, then it makes no sense. Cooking is like making love. You have to mix it up when it comes to flavour and make it exciting. You will always leave here with a happy face because we satisfy both your needs and your wants." He did point out, however, that he can't take all the credit, sharing, "I cook good food because I have a great team working with me in the kitchen."
