Taste of the Caribbean: Team Jamaica

As they gear up to represent our island at the Taste of the Caribbean competition to be held in Miami this month.

Chefs on show displayed the best of the very best the culinary sector of Jamaica has to offer. We have decided to give you a taste of the contestants on Team Jamaica. So without further ado, let's savour the unique flavour profiles of Stephaun Farquharson, Savannah Peter and Dwayne Lamont:

Stephaun Farquharson: Chef Farquharson won the Junior Chef of the Year award at the Taste of Jamaica competition and is hoping to earn the same title at this year's Taste of the Caribbean. Farquharson, who is currently undergoing level three chef de partie training, entered the Junior Apprentice Chef of the Year competition in 2016, in which he placed third and won the team category, alongside his fellow and senior chefs. That propelled him to take it a step further. Feeling motivated, he won the Junior Chef of the Year title in 2017. He was also on the Taste of the Caribbean team for that year, and they won in that team category. He is now ready to take home the title of Junior Chef of the Year 2018, noting that the way in which he puts a twist on international flavour with Caribbean cuisine will impress the judges, surprising their taste buds with just one bite.

Savannah Peter: Chef Savannah Peter is attending Heart College of Hospitality Services, where she aspires to complete the Level Two programme. She competed in the World Skills category in last year's Taste of the Caribbean Competition, where she obtained first place. She is competing for the first time internationally in the Taste of the Caribbean competition in the Junior Apprentice category. She hopes to come back with the gold, saying, "We have so much local authentic flavours to explore, so I hope the judges are open to taking a taste of that and savouring the moment."

Dwayne Lamont: Chef Dwayne Lamont has been competing locally since 2012. Internationally, this will be his third time competing for Team Jamaica. In 2017, he was team captain and Chef of the Year locally. He won the silver medal last year locally in the butchering category and is ready to compete against the Caribbean overseas to claim the regional title. Aside from being on of the two senior chefs of Team Jamaica, he is also the butcher of the team - a title he holds dear to his heart. He revealed to Food that he was a butcher before he was even a chef, so he has a wide knowledge of meats. "They're in good hands, and I'm ready to take the gold," he said.
