Big up the pan man!
THE EDITOR, Sir:
I would like to congratulate the pan chicken and pork vendors in the Red Hills Road,
St Andrew, area. Over the years, I have found them to be consistent where quality and cleanliness are concerned. Despite the fact that, as far as I know, they are unregulated and, therefore, are not bound by to legal standards, they clearly make every effort to ensure they work in very sanitary conditions.
Last week Saturday, I stopped to purchase chicken at one of these vendors and realised that he had a bucket of bleach at his feet in which he stored his utensils when not in use. He wore a proper chef's hat and disposable gloves and did not touch any of the food he was preparing with his bare hands. His attention to cleanliness was more impressive than I have witnessed in some big, established restaurants. Not to mention that the food tasted really good!
I applaud these vendors who are part of our culture and who offer a low-cost and clean option for diners in the city. Big up!
