Nutritious pumpkin
AN EXCELLENT source of vitamin A is the good ol' pumpkin. The orange pulp actually has three different carotenoids alpha carotene, beta carotene, and lutein. These carotenoids have been associated with lowering the risk for some types of cancer and even said to have anti-ageing effects. The vegetable is also a good source of potassium and fibre. The Caribbean Food and Nutrition Institute (CFNI) says that vitamin A is important to help our eyes adjust to light; to help keep the lining of the mouth, nose, throat and digestive tract healthy and resistant to infection; to help build body cells and to promote bone growth and teeth development.
