Nutritious pumpkin

AN EXCELLENT source of vitamin A is the good ol' pumpkin. The orange pulp actually has three different carotenoids ­ alpha carotene, beta carotene, and lutein. These carotenoids have been associated with lowering the risk for some types of cancer and even said to have anti-ageing effects. The vegetable is also a good source of potassium and fibre.

The Caribbean Food and Nutrition Institute (CFNI) says that vitamin A is important to help our eyes adjust to light; to help keep the lining of the mouth, nose, throat and digestive tract healthy and resistant to infection; to help build body cells and to promote bone growth and teeth development.
