What's 4 dinner? Stuffed Breadfruit

INGREDIENTS

1 lb. ground beef

2 tbsps. seasoning (ground)

1 small onion, chopped

salt and black pepper

2 tbsps. cooking oil

2 tbsps. tomato paste

1/4 cup water

1 breadfruit

METHOD

1. Scoop out heart of breadfruit.

2. Cook ground beef with seasonings, onion and tomato paste.

3. Drain off excess oil.

4. Stuff breadfruit with mixture, replace stem and roast in hot oven 425 degrees oF for 1/2 hour, then reduce heat to 350 degreesoF for another half hour.

5. Test to see if the breadfruit is tender with fork or skewer.

VARIATION: In place of ground beef, you could use 1/2 lb. beef and 1/2 lb. pork or flaked fish and spicy tomato sauce or 1/2 lb ackee.
