...or how about some pancakes?

Experiment with your waffles and top them with fresh fruit like strawberries or bananas and whipped cream - Yummy!

By the time this giant baked pancake has puffed to perfection, the spicy apple topping is ready to serve.

German Pancake with Sautéed Apples

2 tbsps. butter

3 eggs

3/4 cup each milk and flour

1/4 to 1/2 tsp. salt

Apple Topping (recipe below)

Confectioners' sugar

Lemon wedges, for garnish

METHOD

1. To prepare pancake, melt butter in heavy 12-inch frying pan in 450-degree oven.

2. In a blender or food processor, mix eggs, milk, flour and salt until smooth, adding one by one.

3. Pour batter into frying pan, return to oven and bake 15 minutes. As pancake bakes, it will puff. Check pancake periodically, using a fork or toothpick to pierce any large bubbles that form.

4. Remove pancake from oven; spoon Apple Topping into centre of pancake. Sprinkle with confectioners' sugar.

5. Slice pancake in wedges and serve at once, garnished with lemon wedges.

Serves 4.

Apple Topping

2 tbsps. butter

1 lb. tart apples, cored and thinly sliced

3 to 4 tbsps. sugar

1/8 tsp. each ground cinnamon and nutmeg

METHOD

In a large frying pan over medium-high heat, melt butter. Add apples and sauté briefly. Add sugar and spices; sauté, stirring frequently, until apples are tender-crisp (6 to 8 minutes).
