The countries of the Middle East include Egypt, Iran, Iraq, Israel, Jordan, Lebanon, Saudi Arabia, Syria, and Turkey. Although the cuisines of
Middle Eastern countries are similar, each culture has distinctly different
eating practices, food preferences,
and food preparation techniques.
Still, the foods are pretty similar: the fattoush, the hommus, the baba ghanouge, the shish kabab, the Arabic coffee, the kubba (kibbeh in Lebanese which is their number one dish), the baklava (dessert) and the Falafel entrees.
Wholesome, tasty, and simple
to prepare, vegetarian soups have been on the everyday menu of the Middle Eastern peasant since the dawn of
history.
Through the centuries, at very
little cost, farmers and labourers of
these lands have enjoyed healthy and nutritious broths, refined by their
ancestors. Since the days of the Sumerians and the ancient Egyptians, generation after generation has been
sustained by peasant soups."
