
DESSERTS HAVE always been seen as delicious evil. Was it not Eve who picked the sweet apple from the Garden of Eden just for a little dessert?
Led by wicked thoughts of rich, creamy pastries; dark, oozing double fudge chocolate cakes; and honey sweet delights, Food last week visited Colin Hilton, the master of sinful pleasures, at Guilt Trip on Barbican Road, Orchid Village, St. Andrew.
An accountant by profession, Hilton gave up the desk job and parted with boring figures for the sake of creating boxfuls of life's pleasures.
Having spent an afternoon with him there is no doubt that this gentleman takes his desserts seriously. He uses top of the line ingredients and mixes these most necessary components with creativity and love to fashion absolutely divine desserts.
Hilton does not normally dish out the secrets of his work but has agreed to give readers the recipes for his Pear Genoise A La Guilt Trip (the basic recipe can be used for all types of fruitcakes, including the strawberry cake pictured here), Mango Napoleon and Fruit Melange.
Soon I will be personally visiting his little eatery (when he is not looking) at the same premises to test his new menu. So look out for that.
