Easter is in the air and thoughts of bun and cheese have the mouths watering. But have no fear; AML Bakery in Port Maria, St. Mary, has over the years provided scrumptious buns for that parish, as well as neighbouring ones. AML Bakery were winners of The Gleaner's Food section Easter bun contest last year.

Bun and cheese forms a major part of Easter celebration in Jamaica. Supermarket and shop shelves are heavily stocked with the tasty favourite. As early as two weeks leading to the Holy Thursday, there is a 'mad' rush of customers loading their shopping carts with buns.

But, have we ever wondered how a bakery makes Easter buns? On a recent visit to AML Bakery, Food got a first-hand look at the entire process.
