Making chocolate from Jamaican cocoa beans while listening to reggae oldies makes me happy. As I create each piece, I think about the cocoa farmers, the harvesting, fermenting, drying, shipping, roasting, winnowing, grinding, creating new flavours - all to bring the moment of joy to the ultimate customer.
