Gluten free Easter treats
There is nothing more delicious than spice bun and cheese at Easter time.
However, there are some persons who cannot enjoy this savoury treat in its traditional form. For persons who are gluten intolerant, they cannot just run down to the store and pick up a juicy Easter bun like everyone else. Have no fear, Food is here to the rescue. For those who require terrific gluten-free treats, your dreams have come true.

Gluten-free Easter bun
Yield: 1
Baking time: 35 mins
Oven temp: 3508F
Ingredients:
- 1lb (2 cups) all-purpose baking gluten-free mix
- 7-8oz water/soy milk
- 6oz brown sugar
- 1 egg (lightly whipped)
- 1oz shortening
- 1oz margarine
- 11/2 tsp salt
- 8oz blended fruits
- 1 handful of raisins and mixed peel
- 2tsp yeast
- 2oz milk powder
- 1tsp xantham gum *optional
- 1tsp nutmeg or mixed spice
- dash cinnamon
- 1tsp vanilla
- 1/2tsp almond
- 1tsp bun spice
- 1tsp white rum/ lemon juice
- 1tbs browning *optional
*(1/2 tbs molasses and a few drops of brown food colouring if you're avoiding caramel.)
Method:
- Preheat the oven.
1. Warm milk (not hot) and add the yeast and set aside for 5 minutes.
2. Cream margarine, shortening and sugar. Beat egg lightly and add to sugar mixture.
3. Add vanilla, almond, bun spice, lemon/rum, browning, milk powder and salt. Mix until smooth.
4. Add flour 1/2 cup at a time. Slowly add the milk and yeast and mix well to make a batter (should not be runny).
5. Grease a 10-inch loaf pan with grease paper and pour in batter.
6. Cover with plastic wrap and keep in a warm place for about 35 minutes.
7. Bake until toothpick comes out clean.

Ingredients:
- 3/4 all-purpose gluten-free flour mix
- 1 egg
- 1/4 cup margarine
- 1/4 milk
- 3/4tsp baking powder
- 1/4tsp xantham gum *optional
- 1/4tsp salt
- 1/2 cup sugar
Method:
- Preheat oven.
1. Cream butter and sugar.
2. Add egg and mix until smooth.
3. Add salt, baking powder and mix.
4. Add flour 1/4 cup at a time, then add milk.
5. Mix until smooth, and fill cupcake pan with an ice cream scoop (1 scoop per cupcake).
6. Bake until toothpick comes our smooth.
7. Cool and decorate (optional).
Chocolate Cupcakes
Yield: 6
Baking time: 15-20 mins
Oven temp: 3508F
Ingredients:
- 3/4 all-purpose gluten-free flour mix
- 1 egg
- 3tbs coca powder
- 1/4 cup margarine
- 1/2 milk
- 3/4tsp baking powder
- dash instant coffee
- 1/4 tsp xantham gum *optional
- 1/4tsp salt
- 1/2 cup sugar
Method:
- Preheat oven.
1. Cream butter and sugar.
2. Add egg and mix until smooth.
3. Add salt, baking powder and mix.
4. Add flour and cocoa powder 1/4 cup at a time, then add milk.
5. Mix until smooth, and fill. cupcake pan with an ice cream scoop (1 scoop per cupcake).
6. Bake until toothpick comes our smooth.
7. Cool and decorate (optional).
