While unaged spirits like vodka and gin have been obvious choices for cocktails, bitter apéritifs, as Campari are trending on the summer beverage menu. Outside of the method of making the drink, there’s one thing on mixologists’ minds when it comes to making summertime sippers: helping those sipping to cool down in the heat.

“Summer is a time we all want to and need to keep hydrated. It is also one of my favourite times of the year, to experiment and develop drink mixes," says prominent Kingston-based mixologist Dajorn Commock. The JWN Academy graduate, who has been in the spotlight as one of the most respected mixologists and is also the bar supervisor at 100 Hope Road, hosted a mixology masterclass at the recent launch of the Campari ‘Respect The Bitter’ campaign held at Mystic Plaza in Kingston.

He shared four cocktails to take you through the summer, including the classic Kingston Negroni, which, though slightly more complicated when compared to the other cocktails, is still a favourite. It is traditionally equal parts of Campari, gin and sweet vermouth. “I find that women, more than men, like a sweet mix, that balances with the bitter taste of Campari,” Commock said. “The mistakes people make when mixing Campari, is adding a lot of sweet with it. That messes up the flavour; as we say, you have to ‘respect the bitter’.”

CAMPARI GRAPEFRUIT

INGREDIENTS

1 – 1½ oz Campari

Grapefruit juice or grapefruit soda

1 orange wedge

DIRECTIONS

1. Measure 1 – 1½ oz Campari in a jigger.

2. In a rock glass, pour the Campari over ice.

3. Add grapefruit juice or grapefruit soda.

4. Stir.

5. Garnish with orange or lemon wedge.

CAMPARI ORANGE

INGREDIENTS

1 – 1½ oz Campari

Orange juice

1 orange wedge

DIRECTIONS

1. In a rock glass, pour the Campari over ice.

2. Top with orange juice, which can be freshly squeezed from an orange.

3. Add orange wedge as garnish and stir.

4. Savour the flavour.

CAMPARI PINEAPPLE

INGREDIENTS

1 – 1½ oz Campari

3 parts pineapple juice

Triple Sec or sweet vermouth (optional)

DIRECTIONS

1. Pour the Campari into a cup.

2. Stir in chilled pineapple juice.

3. Add optional ingredients to the mix.

4. Stir, sip and savour.

DAJORN COMMOCK'S TIPS FOR THE PERFECT CAMPARI COCKTAIL

1. Respect the bitter; don’t be afraid to get creative but don’t try to hide or change the flavour of the Campari.

2. Always try original mixes and add your twist to them.

3. Remember it is an aperitif, a drink, that if you have it before a meal, it will open your appetite.

4. While the cocktails are refreshing, it is important to rehydrate in-between the mixes you consume.
