1 of your daily Smart Eggs

1 slice of honey wheat bread

1 tsp butter (to butter bread)

1 tsp vegetable oil

1 oz maple syrup

Lightly butter the honey wheat bread, then use the open end of a high boy (juice glass) to gently remove the centre of the slice of bread. Place both the hollowed out slice and the circle of bread in your frying pan, butter side down, on a low heat. Crack your Smart Egg into a cup then pour into the centre of the bread. Use the circle to judge how dark you would like your toast. Serve sunny side up or flip for desired texture. Drizzle with maple syrup.
