... Spring Garden Café?

Spring Garden Café brings diners a wide array of seafood dishes in very creative and attractive presentations. Having participated in The Gleaner-sponsored Restaurant Week last year, the restaurant is now onboard once again to serve up a treat for its customers.

The maestros in the kitchen are chefs Lennox Wilson and Trevor Panton. They both started in the industry in two very different ways. Panton started his career as a steward at a restaurant right after leaving high school. "I really just learnt everything while being in the kitchen, and the very first thing I was taught was grilled lobster."

Wilson, on the other hand, became interested in the culinary industry during high school, and then continued by pursuing catering courses. The training he gained overseas eventually led him to work there for several years.

For both chefs, it is hoped that this year, customers will come out and support the restaurant. According to Panton, eager customers have started to call the restaurant, enquiring about their participation.

When at home, Portlander Wilson loves to cook jerked chicken. "I am from Portland and the women love their jerk chicken," he says chuckling.

And satisfying the taste buds of his children, Panton prefers to cook rice and peas with chicken for them.
