... Mystic Dining Restaurant and Bar?
Dwight Watkis, the chef at Mystic Dining Restaurant and Bar in St Ann, devises contemporary Caribbean cuisine at the mountain top restaurant.
The 32-year-old has been at the restaurant for over two years and is getting ready for his first experience as a chef during the Gleaner-sponsored Restaurant Week.
"We will be doing a five-course meal," Watkis told Food.
His favourite dish to prepare is the ackee-crusted lamb rack with rosemary sauce. Visit the restaurant this upcoming restaurant week and you will have the opportunity to find out if the dish is worth the labour.
However, when he is at home, he prefers to keep it local and prepare the national dish - ackee and salt fish, with his starch of choice - yam, dumpling and bananas.
Watkis told Food that most of his training is in Italian cuisine and fine dining, but he hopes to promote the fine dining aspect of the restaurant, this year.
Under normal circumstances, the restaurant opens for lunch everyday and dinner on Friday and Saturday nights. Bookings can be made for special groups during the week.
But for Restaurant Week you will get the opportunity to dine every night.
